We could start a whole thread on this topic. My cars are clean - primarily because there is no eating or drinking inside of them. This is easy to enforce because two of them have no stinkin' cup holders!!! I use the plastic tray floor mats so muddy/wet shoes do not touch the carpet. I also put color coordinated, large bath towels on the seats to keep them clean - just throw the towels in the wash every once in a while. I also keep the exterior cleaner with car covers. These are my cars. My wife's van on the other hand, is the exact reverse. It has cup holders and the resulting spill and drip stains. The sliding doors have been glued shut by spilled soda.
