When any engine overheats, the oil thins out a bit & this can lead to low oil pressures as the viscosity of the oil is changed. when you are driving at speed, you will get a natural air flow around the engine maintaining a steady temperature. i would check for water leaks first & the level in the water top up tank when cold. it's very possible for the thermostat to stick from a build up of limescale, etc or if it's just old & worn. if it's this, it'll be easy enough to replace yourself or fairly cheap to get it done i would've thought, hth us. :-)
