distilled water is best as tap water has stuff in solution that may precipitate out in your cooling system. You can buy jugs of distilled water at most places that sell coolant.
I'm pretty sure that even the older 9-5's did not come with G05, but it is a good coolant to use if you flush first or if the old coolant in the car was compatible. Dexcool was used in newer cars (2002+?) and is probably not compatible (I would for sure flush first). Note Dexcool is kind of orange coloured, whereas G05 is kind of golden... not massively different in colour so double check, and if you are unsure, a flush wouldn't hurt.
