I'd put a Heli-Coil in the bolt hole. You probably partially stripped it, which isn't hard since the valve cover is aluminum. A small Heli-Coil kit (M6, I think) probably isn't horribly expensive, and since you could take the valve cover off to work on it and shake out any aluminum shavings, it would be pretty easy to do. I've accidentally stripped the holes for the engine mount yoke, and someone who owned my 9-5 before me stripped out the oil pan holes in the rear engine cover, so none of those aluminum threads are all that strong.
