Supposedly Mobil 1 is made from Group IV base oil (polyalphaolefin, or PAO) while Mobil "Super" is made from Group III (hydroisomerized refined crude). According to the FTC, both can be called "Synthetic", which I guess they are even though one is synthesized from small molecule feedstock while the other is made by treating a mixture of long molecule feedstock.
The physical properties are not much different. I can't imagine why the oil pressure of a fresh 10W30 product from brand A would differ much from a 10W30 product from brand B. Viscosity is kind of a basic property. It's possible that by chance the viscosity at the oil pump temperature, which is different from the temperature at which the "30" number is derived, is enough higher in the "Super" that it would make a difference between "light on" and "light off".
The first step with oil pressure issues is to verify the accuracy of the pressure sensor, which you have done. The second step is to verify that the screen over the pickup tube is clear of debris. The third step is to try a more viscose oil: I would recommend Mobil 1 10W40 "High Mileage," which should be a decent step over 10W30, either Mobil 1, Mobil "Super", or any other synthetic formulation from a different company. Another choice is 5W40 synthetic heavy duty truck oil, such as Shell's Rotella T-6 or Mobil 1 Diesel Truck oil. There are arguments both for and against using truck oil, but many have used it successfully. Including me.
The final step, if all of the above fails to cure the problem of low oil pressure, is a rebuild.
