It's not a hard job to remove the yoke and the power steering pump. The pump and bracket both have to come off so you can get to one of the exhaust manifold bolts/studs/nuts. One other thing I'd recommend is to take off the support bracket on the bottom of the turbo. The lines and the exhaust pipe will still hold it in place after it's unbolted from the exhaust manifold, but you'll be able to move it around just enough to make things easier. I've used bolts to connect the exhaust manifold to the turbo for exactly the same reason your mechanic did. I prefer to use studs and nuts for the manifold, though, since you can hang the gasket and the manifold off of the studs, not to mention if you use bolts, there's no way to attach the exhaust manifold heat shield.
I've never used those Stage 8 fasteners, but they look interesting. The last time I replaced the fasteners on one of my Saabs, I used stainless bolts to connect the exhaust manifold to the turbo, and used wavy lock washers. I heard that Mitsubishi uses them on some of their cars. I'ver never had one of those bolts come loose, and they've been on there for several years. I get them at a local fastener supply store for maybe $.25 each.
