If you cut the brake pedal in half, all you need to do is add the clutch pedal and that is easy. There are some cruise control switches associated with that, but odds are your cruise doesn't work anyway.
The only electrical tasks are unplugging the ignition switch and the reverse light switch (take a picture of before on both the car you are modifying and the donor), and that's really easy. There will be left over wires on the former automatic that you don't use (to the neutral safety switch- orange, IIRC), but I think those will be found on the donor too.
having a fully functional donor is immensely helpful - photograph both cars as you tear them down. This removes a lot of delay from hesitation and doubt.
