I've been following your discussion about this for a while. My car also used to do the fan thing. Likewise, I tried everything, including a new air mass meter, alternator, etc. It's caused by a quick change in load on the engine when the alternator needs to provide more current to offset the drop in voltage when the fans turn on.
I fixed it by getting rid of a huge vacuum leak. The leak was through the brake booster. It was caused by the seal between the booster and the master, out of which the booster rod pokes, to push on the master piston. I found the leak by feeling under the master, where it meets the booster. Huge leak, but all components appeared outwardly perfect. I drove for five years like this.
