P0125 and P0135 have appeared together on this board. I've attached a link with good advice and diagnostic info from Mr. Bubble and Ari for ToddH's '97 9000 CS.
P0125 is where you should start. The ECU has a bad habit of accusing sensors that are guilty of nothing worse than telling the truth.
The problems seem to have started after the new Saab thermostat was installed. Was it installed with the thermostat's air hole at the highest position? Was it installed with the thermostat's outer perimeter fitted inside the gasket's groove?
Does your code reader show the ECU's freeze frame information? A clue to the problem might be found there.
Have you replaced fuse 28? I don't think it's bad, but it is a cheap and easy replacement that will eliminate a possible cause of a P0135.
