I don't recall if the cars of your vintage can flash the categories that triggered your check engine light, but you should search here for that.
O2 sensors do get old and slow - but I don't know that temp senders do. For one thing - a slow temp sender is still going to pretty much correct - coolant temp doesn't vary anywhere near as rapidly as exhaust gas can.
You should verify that you have the correct part number for both sensors.
I'd put the old temp sender back before I did the O2.
