Overheated, blew head gasket: How repairable?

Due to a leaking upper hose from block to radiator, and operator inattention (me), I drove my '96 CS till it was massively low on coolant on Saturday. But it never got stinking hot.
I'm wondering, what is peoples' experience with replacing head gaskets after an overheat. Do piston rings lose temper and so compression is not good afterwards?
In my defense, the Check Radiator light has been coming on during the checkup at startup and winking off so I thought coolant level was good. Turns out a prior owner had unplugged the sensor and nipped off its wiring, so the car wasn't getting the signal that coolant was indeed low, and in the end massively low.
I'd say, every owner needs to check that theirs is still working - - it's a probe that pokes up into a well in the bottom of the coolant reservoir, triggered by an electromagnet on a float in the tank. Plugs in to a two-wire connector just ahead of reservoir. The insulation on the wires can go bad and crumble away, which gives false notice of low coolant. Some prior owner solved that by nipping it off.
My car is leaking coolant into the cylinders and also compression into the coolant system.
