If you disconnect the sensor just don't forget and think you still have one. And if you sell the car let future owner know. I thought my car had the sensor but found to my cost that the prior owner had nipped the wires off. My car had odd behavior, in fact overheating from a leaking hose, and since I saw no low coolant light I failed to check it in time and blew at least the head gasket. Haven't pulled it apart yet to find out the total of damage.
On my earlier 9000 I had the blinking light and crumbled off insulation.
The coolant tank pops out of a bracket on body by prying the nylon tab, I forget which way, up I think. You can then get at its bottom. Then the sensor probe simply pries out of a made tube in the tank. And pry apart the wire connector.
Then I cut the wires, close to the sensor and close to the plug. Soldered good same-gauge wires in place, keeping little sleeves of heat-shrink tubing slid up the wires away from the heat, then slid them down over the bare stripped stubs and the solder joint and heat-shrank them down.
It's nice to have the sensor, in case you do have a big coolant loss or low coolant level.
You can buy moisture-resistant heat shrink, has a soft sealant up inside it, but it's not really needed there, it's way up high and stays dry.
