I hadn't thought of putting the '95 ECU into the '97. It should work aside from the OBD-II features not being operational. Will have to give it a try. I don't know how definitive Ari's go/no go test for the ECU using the Check Engine light is, but that is definitely a difference in behavior between the two.
That's a great idea to leave the old sensor wiring in place, I was looking at it and just routing the wiring seems to be the worst part of the job. Not worrying about removing the old stuff will make it much easier. I found the connector behind the alternator and that looks tight but accessible. I'm not concerned about it looking factory, this is a driver not a show car. Routing the new cable around the easiest way and securing with wire ties will do the trick.
I was wondering if there was a test for the crank sensor itself similar to what you can do with the ABS sensors (look for specific resistance range) but have not found anything other than the test in Ari's guide.
