Typically temperature sensors in cars are thermisters, used for their appreciable change in resistance with temperature and low cost. They should read the same resistance regardless of polarity. Diodes don't change much with temperature, although they can be more accurate. A simple diode sensor needs a multimeter with a diode function to read it properly. Using ohms functions can result in goofy readings depending on the meter and diode. With 2 wires it's hard to imagine some type of active sensor that maybe hard to get meaningful measurements.
On the wires coming from the car look for 5 or 12 volts on one wire and ground on the other. A manual could tell you more specifically what to expect.
Sensors for road salt exposure are sealed which can cost several times more than the sensor itself.
