I drooled over my cousins brand new S4 Avant last time I visited him in Switzerland. It had 500 km's on it and he let me take it for a spin. Now that they are available here, I'm awfully tempted, though I had a hard time justifying the extra dough for the S4 sedan over my Viggen, let alone the Avant (31.5 k vs 39.5 k dollars at the time, for the sedan) Did you have good long term success with the '98 A4?
As for body roll, I have not driven the CV. My Viggen is perfectly acceptable to me. Perhaps if I were into competitive auto crossing, I migh have a different opinion, but within the limits of reasonable road driving, it is fine. I routinely dust A4's and 328's in the twisties. Not necessarily cause I have a better car, but probably because I drive faster and harder.
By the way, I think the Saabs are reasonably neutral handling cars. Esp. the Viggen. I just got home from a fast 8 hr drive on snow covered roads and I did not understeer or oversteer once, and I did plenty of skidding:-)
Good luck figuring out you're mom's troubles. Sounds like she drives hard if she even notices body roll, or else her tires are way underinflated!
