When you say bounce, I hear lack of damping. So the shock may not be up to the load. I would expect that the high inflation pressures may be responsible for the excess bounciness when challenged with washboard conditions.
As for a smooth ride, I would abandon the high pressures. I think that if you took out a 9-5 with 42 psi, you would see things differently too.
As for steering, you are generating large lateral forces in those curves. The rubber elements an chassis are distorting and your steering geometry is gets worse with higher loads. Many Viggen owners reworked their suspensions to get better steering, not just an issue with acceleration forces on the steering geometry.
The convertables flex a lot. There is no A-pillar to help support the strut towers. There are different struts and perhaps springs for the convertables as well. I suspect that the suspension may have been softened to impose lower dynamic loads on the body. That I expect would create a softer ride, perhaps then under damped.
You could install some of the abbott suspension upgrades and improve steering.
Washboard roads are dangerous in curves, as the tire contact can be severly affected and you can easily loose control. Took out a door that way many years ago!
My impression with installing the Abbott kit was that it seemed like both wheels were then pulling around corners. It seemed like only one wheel was working before, and load induced steering geometry was letting the other wheel just come along for the ride. The body roll seems to be less, as having both wheels working keeps the vehicle more level. All of that was 20:20 hindsight. Before the change I really had no idea what might be wrong, just that things had become mushy. What is interesting, is that with my blizzak snows mounted, I am very happy with how the vehicle is handling. I used to find the snow tires an extremely poor handling setup.
