It would not have occurred to me to try from underneath, but I definitely see how that could be valuable.
The sensor is located at the arrow, held by a single torx screw. The cable runs along to the back of the head, where the connector is located right by the thermostat. Assuming your screw is not seized in place the whole job takes a couple minutes. The only things you will want to remove are the exhaust manifold cover and intake manifold cover - both are already removed in the picture.
You can try hosing the screw down with Kroil or whatever in advance, and might consider tapping on the head with a hammer to break any corrosion. Obviously, don't damage the screw.
