The sounds like a lot of fun. I'm not an expert on the matter, but CV joints themselves can handle a ton of angle. That's kind of their thing, think about how much angle they see with the wheels at full lock for example. The inner drivers a bit less so but I think you'd still be in a safe range. Make sure they aren't at risk of poping out at full extension though (you know, while that Taurus is flying through the air off some mad jump). If so you might need to look at making some limiting straps to limit the droop of the suspension when unloaded.
