I'd say just stay in NS, it is beautiful year round, but you said you wanted less winter (personally I find even the harsher conditions have a beauty of their own - eg the surf's great then). That said, it's pretty common for retired Canadians to fly south for a good chunk of winter, maybe after Christmas since that kind of feels "right" with snow.
I have neighbours who do an annual tri-training trip to NC for a few weeks in late winter. They love it because the weather is decently warm by Canadian standards, but under the radar compared to the usual places snowbirds go (Florida, Arizona, etc). Though, visiting somewhere and living there can be totally different experiences - good to get feedback from locals I guess!
