First, you will probably get more responses if you post your message in the "9-5" board. And you will get some extreme comments on the 4 cylinder versus V6. Many SAABophiles have an abhorrence of any V6 as not being true SAAB. You will probably get a better deal taking one of the 2000's - try some of the on-line buying services to see what best price you can get before haggling with the SAAB dealer.
Depreciation can be bad - SAAB is not high on the popularity list for used cars. Spilling coffee is not likely to cause a problem with seat heaters - but is not good for the leather and carpet. If OnStar not already fitted in a 2000 model, it would be expensive to add (& the dealer will likely enjoy taking your money if he can do it). Don't see the need for a Diehard - what's your concern? Hope you do become a SAABer and enjoy it.
