As it happens we took a 300-mile round trip with the Outback not long after getting it. It did well on the interstate, though we're not in a mountainous part of the country. There is a manual mode for the transmission which should help under those kind of conditions.
Power is adequate and road feel is good. (Though as the wife, who is not even a car person, pointed out "It doesn't handle like a Saab." Not that it's bad, but driving Saabs spoils you!) At no point did the car feel underpowered merging or accelerating up to speed. It's only 175 HP but the CVT probably helps keep the engine in the power band. (Though most of the time it seems to mimic a conventional 6-speed transmission.) You won't win any drag races but won't have any problem in normal traffic. At cruising speed of 65-70 mph the engine was turning over less than 2000 rpm.
I probably should have measured gas mileage on the trip but didn't bother. We've put a little over 1000 miles on the car and according to the computer the overall average is just shy of 27 mpg. So if that's anywhere near accurate it's probably doing a bit north of 30 mpg on the highway. I can tell you that we made the round trip on 1/2 tank of gas, including some local driving at the destination. (Given that the Outback is 4WD with a strictly conventional gasoline engine, and is not really a small car, I'm happy with the gas mileage.)
Now only if we can figure out the darned radio. Making progress on that front, but it's still confusing.
