Exhaust -- If you keep the induction and heads stock or near-stock, I don't think you'll see any advantage in going with anything larger than normal 1.5" or 1.75" pipes. Look at that little tiny outlet in the exhaust flange -- all the gases from two cylinders have to get through that, so your limiting factor isn't going to be the pipes. (Someday if you want to get really $eriou$ about increasing engine performance, you can have the head machined to increase exhaust flow, or even look into the dual exhaust port modification that Motor Sport Services can do. But that's major work and mucho bucks.)
Speaking of Motor Sport Services (Jamestown NY), if you're not committed to a dual setup and/or to maintaining total originality on the car, you might look at their "Y-pipe" exhaust setup as an alternative. It uses a Y collector instead of the front "dumbbell," and then a single exhaust pipe to the rear. Since there's only one main pipe, it's easier to fit than the stock dual system, and performance is good. For street use, I'd recommend getting the version with two mufflers, unless you really enjoy God's-own-chainsaw sound effects...
You can get a new Weber 34ICH from one of the marque specialists who advertise in the classifieds here, such as West of Sweden Saab. While you might be able to find a lower price elsewhere on a "generic" 34ICH, a specialist will be able to help you with questions about fitting it. This is particularly important if your car came with a Solex carb rather than a FoMoCo (I can't remember what year they switched on the 1.5L) as the throttle linkages go in opposite directions and the Weber is set up to work in the FoMoCo direction. Don't forget that you'll need appropriate jets and that the 34ICH has a manual choke, so you'll need to hook up a cable.
I'd say you're headed in the right direction, though. If your engine was basically sound to begin with, the 34ICH and MSS or other good exhaust -- plus a Pertronix Ignitor to replace the points -- are about the easiest things you can do to make it better-performing and simpler to maintain.
