I've also heard this is fairly common and I don't know how to adjust it. However, while you're waiting for the info, don't overlook another easy-to-fix possibility: the fiberglass on one side may be stuck. The rear bodywork is riveted, caulked, etc. onto the chassis, and it's possible somebody may have gotten overenthusiastic on one side.
I'm like you in that one of my rear tires rubbed on the fender lip when I hit a big bump, but as best I could measure the rear axle didn't seem to be out of line. Instead, the lip of one fender seemed to ride closer to the tire tread than the other. One day, trying to figure out what to do about this, I just grabbed the fender lip and pulled outward, hoping to see how much give there was in it. There was a "peeling" sound and suddenly the lip popped out about another inch, creating enough clearance for the tire!
