It resists oxidation better at high temperatures, flows better at low temperatures, has a higher flash point, retains viscosity longer--among many other attributes. The first is especially important if you own a turbo car, as the turbo bearing can reach very high temperatures which will coke a fossil oil. That alone is enough reason to use it in a turbo car. In a normally aspirated car, a regimen like your's is probably good enough, though you could extend your change intervals to 5000 miles or more by using a good quality synthetic since it oxidizes more slowly. By doing so you could almost justify the extra price for that reason alone.
