Your readings are quite normal for the classic 900. Most will run above "3 o'clock" at normal temps, and inching toward the red zone after a long freeway drive, once you slow down to city speeds. Certainly consider changing to an 82 degree C thermostant if the current one is an 89 degree. Another option is to change the radiator fan switch to a lower set point item (VW makes one with a lower set point which is a direct replacement), but this comes at the expense of more wear and tear on the radiator fans.
