As jimmy said, if you have a same year donor car, the swap would not be difficult. It will be time consuming, potentially expensive, and there will be a lot of little details to be covered.
Your biggest issue will be wiring. Things on a V6 are not in the same place as they are on a 4, so the wiring harness will be different. If the 9-5 is like earlier Saabs, this may be as simple as taking the harness with the motor. Or it may not. You may need to replace wiring behind the dash. The V6 has the "afterheater" pump. I can't tell you if that means the ACC unit is also different...
What I would question is why are you considering this? Unless the V6 has already been damaged by the timing belt breaking, I can't imagine why one would want to go through the trouble to swap. If you're doing this to "hot rod" the 9-5, you'd likely be better served by simply buying a 9-5 that already has the 4 in it, and selling the V6 car. There are plenty of folks out there, myself included, who enjoy the 9-5 with the V6 engine.
But if your reasoning is due to the "potential" of timing belt breakage, I would say that proper preventive maintenance - meaning changing of the belt, tensioner and pulleys at 60k intervals - will give you a very long life on a V6 9-5.
