Thanks for such a thorough write up.

My seats are in the car at the moment, but working from memory, I'm thinking that the seat control switches could be mounted directly on top of the long side skirts. It just means poking holes in the naugahyde for the screws. And not having the plastic side panels would be no biggie as the skirt comes well down the side of the seat. It won't look perfect, but that's OK. No one really sees it anyway. If I were to put the entire cover back on, it's actually fastened by two torx screws and one torx bolt. If necessary I think I could slit the skirt to fit the long upper tab , but the screws and bolt are really what holds the cover in place. Alternatively, I could Dremel off the long tab and smooth the edge.

I know the seat belt parts swap side to side and I don't care if the nanny light doesn't work. I always buckle up anyway.

I may just do the side-to-side swap for now. As derf pointed out, hardly anyone else drives my car so the memory is more a luxury than anything else. If I do it, I think there's enough slack in the harnesses for it to work OK. I don't know about the sensors on the memory seat motors. will have to look at that when I have the seats out.

For me, this will be better than swapping the skins and roughly the same amount of work. It gives me essentially new padding under my butt and on the back which will make my seat more comfortable. I'd really like new skins, but that's not in the budget at the moment.
