You are describing turbo lag and since you compare your car to the sport mode in the older 9-3 I assume you have the sentronic transmission. If you have the sentronic the best way to control this is to put it in manual mode and control your own shift points. If you are in D and nail it the car's response will be relative to current RPMs. If the RPMs are low then the turbo will take longer to spool up and you get the nothing followed by neck snapping acceleration and as you said in a critical situation this makes things a bit unpredictable. If the RPMs are higher the turbo will get going much quicker and thus you feel immediate response. Using the manual mode you have much more control as you can downshift quickly pushing the RPMs immediate higher and then nail it. You can accomplish the same thing by flooring the the car and the accelerator will go into kick down mode but my feeling is that this takes longer than downshifting yourself. Essentially the manual mode in the sentronic replaces the "S" sport mode but you do have to upshift it yourself. This is probably easier to understand if you've driven a lot of manual transmission cars.

The user manual also states that the throttle is more responsive in manual than when in D and I noticed that myself before finding the explanation in the manual.

Of course the real solution is to get a 5 or 6 speed manual, which I now wish I had done. The auto sure is nice on interstate rush hour crawls, but a manual is so much more fun to drive.
