Because there is lot of potential computer module and electronic hardware that might go wrong with MY03 or MY04. Issues that Saab has fixed for MY05.
Why Saab looses its value? Its very complex matter, some car brands are like gold, they just keep the value, you can always buy and sell it without major money loss, there's like secret agreement :P
And old car is always an old car, you never know what owner has done with it or left undone.
I would say that present new car discounts are something not to miss, this is low as it gets.
And I'm not saying that 03 or 04 would be totally bad move, they could be heavily tested "ironed out" cars.(means reliable) When new car comes ouf of factory they do many tests on it, all the way, but its never the same as driving the car few years and see what weak points comes up.
Be carefull with 6-speed and automatic, never buy them without test drive.
