$750.00 is maybe about right with no hidden extra popping up because they didn't know how to do it right the first time.
It sounds like the shop bit on more than they could chew.
As saabdoc says, the thermostat housing HAS to be removed to get the pipe and pump out and it is crucial to replace the o-ring behind there together with the o-rings on the pipe. And the catalytic converter, not exhaust manifold has to be removed.
Make SURE they don't also will charge you extra for when they have to remove the crank pulley and timing cover to reset the balance shaft chain tensioner due to a noisy balance chain.
This is one of the jobs that I don't jump for joy over since it is labor intensive.
