I towed a Sonett with 2 bum wheel bearings about 600 miles from San Francisco back to LA in an '03 9-3 Linear w/ 5-speed manual - could barely feel it was back there.
Flat towed my '73 99 150 miles from Palm Springs to LA with my C900 Turbo 5-speed, was a little hairier, mostly just the brakes were the scary part.
Also towed about 2000 lb of cargo from Chicago to LA, between a utility trailer, hatch filled to the brim, and snow tires on the roof in my C900, made that one fine.
3000 lb shouldn't be a problem actually pulling the weight (especially since the SS cars have such big brakes), it'd be getting a hitch that would make your wife comfortable.
I towed all my stuff with the factory SAAB accessory hitch, Class 2, 1,000 lb rated capacity without trailer brakes, 2,000 lb with brakes, and 300 lb tongue weight.
I know Walter has towed 9000's with his 99 EMS with that same hitch.
Food for thought. I think your boat is within the realm of possibility.
Maybe look for a Turbo-X Combi?? (That'd be my ultimate tow vehicle for my race car, with a little lightweight trailer.)
