All Saab xenons turns pink with age but they can go on for a long long time after that.
It is not as easy to change these bulbs as the cars from the 70s and 80s but still possible. But you need to know the sequence in how things are removed and know how to release the little clips. Since it is very cramped quarters on both sides you might want to study the setup carefully first so you don't break anything.
On the early 9-3 the igniter must be twisted off first before the bulb can be removed but on the later 9-3 (08 and up) and 9-5 model, the bulb and igniter is one piece and has to be removed together.
So that's one reason why they say it is best to have a shop do it since they know which model it is and what it takes to replace and the bulbs are quite expensive and easy to break.
