I'm not quite following.
So the first used engine installed blew a head gasket the first day it ran and the second one installed? How did that one blow up?
Head gaskets just don't blow up like that so maybe, just maybe that engine was overheated from the crash that made the car end up at the junk yard in the first place.
That can be tough to see if the junkyard don't keep track on how the car looks like and if the radiator is crashed and what not. But sometimes you can see traces of bad overheat if looking carefully.
I always rip the oil pan off and check for sludge and take the valve cover off and install new head bolts if the engine is from a certain pre VIN in 2001.
Certainly a new thermostat goes in and front and rear engine seals and some other small stuff that is good to do when the engine is out. New long exhaust manifold studs for instance and a new gasket.
