We confronted the same issues with our '07 Aero SC when our twins were born three years ago. We ended up with Peg Perego bucket seats and Marathon Britax toddler seats -- I can second that particular recommendation. I'm tall, my wife's tall-ish, and the Pegs worked well enough for all of us to fit in the car. You will be bending over, though, to get them in and out.
What made us sell the SC and buy an Odyssey was all the other stuff we needed to cart around for the twins. Sad day to see the new owners pull away in our beloved SC, and I still look longingly at SC's I see on the roads. We did keep the '08 Aero SS, so we're not a Saab-less family.
Good luck with the new baby -- it's a great ride, if of a different nature.
