Yes, cars definitly do not run at stoich during WOT, infact, many go into open loop in such conditions. (i.e O2 sensor is completely ignored). Richening the fuel is done for two reasons, cooling and a rich mixture also burns more slowly (it's less explosive) so it reduces EGTs and detonation. I VERY rearly experience detonation underboost. Mostly when moving from a dead stop. My point is that even the most agressive driver does not used full boost much, and that is probably the only time you are losing efficiency from ignition retard etc. Infact, regular gas contains more BTU per unit then premium because of the lower volume of additives. I've found that running premium I can sustain max boost almost indefinitely, but with reg, I can sustain it longer then I need it most times anyway. If it's hot and I'm towing I put some premium in....other then that it's the cheap stuff for my Saab.
