I would like to see more of the 9-3 interior features integrated into the 9-5. On our 2002 there is already so many unused blanks. The 2005 is even worse since onstar is an option and they moved the ESP button over to the left of the steering wheel. More sound insulation would be nice along with a more attractive head liner material. One touch up and down would be nice and seat memory that recognizes the key that unlocks the door and sets the seats and mirrors. Lighted steering wheel buttons. I can never remember what is what in the dark since its my wifes car most of the time. My vw passat lets you turn the steering wheel lights off with a little button if you don't like them. I do like the cockpit like feel to the drivers seat, so really it would just takes some minor tweaks to improve things.
