The serpentine belt drives the alternator, power steering pump, air conditioning compressor, and water pump. Of these, loss of the water pump is the only one which can affect the engine (Richard's problem described below was almost certainly a timing belt, and probably a V6 engine as well).
By continuing to drive until the temp gage went into the red, you may have caused some engine damage. Since you reported some lost coolant you may require a new head gasket. If the temps got too high before you noticed it you may have also warped the head which would require a new head for the engine. But you also may be lucky and only had coolant release from the vent in the overflow bottle.
Have your mechanic check your engine oil for signs of coolant, and then pressure check the cooling system. I would also recomment not reinstalling a Continental belt, your report is the third (IIRC) in the past week regarding this brand of new belt coming off without a pulley problem!
Have your mechanic check all the pulleys too. Hopefully you were lucky, or fast acting, and the coolant loss was only from the overflow bottle.
