0W-40 vs 10W-30 and oil pressure

I had previously reported that my oil pressure light kept coming on in traffic. It got so bad I didn't want to drive the car anymore. The dealer found no sludge with the scrape test, but suggested dropping the oil pan. I thought I'd try the 0W-40 Mobil1 that I heard so much about and the oil light hasn't been back on since.
I realize I haven't fixed the problem, but at least I have some time to contemplate it. Am I correct in thinking 0W-40 builds more pressure because it is thicker, but also flows less volume? Could I have a weak oil pump? Is there a way to diagnose this without replacing the oil pump? I installed a pressure gage, and the pressure looks fine. With cold oil it starts at 80 psi (too high?) and it never really goes above that (pressure relief valve?). After a while the idle pressure drops to 30-25 psi when sitting in traffic, but never lower.
I am considering a flush with Auto-RX and then switching back to 10W-30. Anything else I should try? Any suggestions welcome.
