The outside temp sensor will make the A/C go nuts if it goes bad. This is inserted into a hole in the grill below the bumper. Remove the panel down there, 4x8mm hex forward and 4x#20 torx on the back. Check that the sensor is not damaged and check its harness connector for damage, corrosion and fit.
If the engine temp sensor, I had one drop to zero, and could find no problem, but after reconnecting it worked right and stayed that way. So I suggest checking/reseating its connector.
