My first guess is that the oil leak is between cylinder head and engine block at around head bolt number 8.
In some rare cases it has been between the front engine cover and engine block so the shop might be right?
The need to do extensive testing with cleaning the engine in that area and add leak dye to the oil and study the area with a black light to determine where it starts to leak out.
It is no use to pull the engine on a hunch when it might only need a cylinder headgasket job.
As a first low cost solution I would suggest to replace the cylinder head bolts and retorque the cylinder head gasket. It might not stop the oil leak completly but may reduce it some.
It is also rare that the Saab engines need valve jobs. From about the end of 70s and the beginning of 80s, both Saab and Volvo came out with really good valves and valve seats which have pretty much done away with the need for valve jobs.
If I have the valves apart to replace the valve guides I usually give the valve a light lap job which restore the surface without the need to grind or cut the valves and seats.
I don't know which PCV mod of the 4 your car have received but you might benefit to have the latest one done which restore the car back to almost what it had from factory.
