Since I just lived through a similar experience, which generated a P0116 code and a check engine light, which turned out to be the thermostat instead of the sensor (could have been either to give the code).
I noticed that the gauge would go back and forth from full cold to normal when I hit a bump, and I thought I had a loose connection to the sensor. But the gauge is only one of the devices that reads the sensor, and I am surprised that your case didn`t throw a code or a check engine light.
Do you still get heat inside the car? Apparently the sensor is also used to compare engine, outside and cabin temperature to assist with the ACC settings.
