I bought a 2001 Aero (5-speed) CPO sedan, which is the successor to my '88 9000T. I made sure to drive a bunch of 9-5's before I made up my mind.
I would say that the 9-5 has a more refined ride, more modern-looking interior, but with much reduced stowage space. If you care about stuff like this, the door pockets in the 9-5 are tiny, and the center console is also fairly useless. I do miss the lack of a hatch in the 9-5, but my wife drives a 9-5 wagon, so we're covered as far as moving large items is concerned.
The 9-5 has seats that are even more comfortable than the 9000T's, which were no slouches in the comfort dept. It also has all of the more "modern" things, such as airbags, lots of computer sensors, etc. The FM tuner in the 9-5 seems pretty amazing in terms of what it can pull in out on the road, and I'm finally free from that infuriating power antenna! I think the 9000T had a bit more distinctive styling for its time, though. The 9-5 Aero looks pretty slick with it's lowered suspension, but the front lip spoiler is perilously low to the ground, scrape-wise.
I recommend that you go out and actually drive a couple 9-5's to get a better feeling for what the differences might seem like to you.
After almost a year of 9-5 ownership, I am very satisfied with my "new" Saab. Check the CarFax, and get yourself a Saab Iris report (warranty repair records) on any used Saab in which you might be interested.
