Of all the Saabs you've owned you only have one potentially decent auto and I bet that '96 900TC was a stick too. It's a whole new world in automatic Saab land comapred to your Saab experience and any 9-5 with an automatic can be very, very satisfying for even a die hard stick driver. High torque turbos like Saabs are particularly auto friendly and now the autos have 4 or 5 speeds, sport settings and even paddle shifters.

The 9-5 V6 has it's fans. The fours define the base model that is often equipped the same as the more fully equipped V6's and the four is also the most powerful Aero version, the sport model. They are all very, very cool SportWagons.

If you consider an automatic you'll have a about 10 times as many cars to choose from, stick SportWagons are rare. Sticks in the executive class of cars are rare anyway, more popular in the smaller sportier cars, and sticks in SportWagons are the rarest of all, but whose to say you won't find one.
You are correct, no V6 sticks.

Don't be afraid to check out the sedans for reference, same car same equipment. The fact that you didn't mention the 9-5 Aero, greatest Saab of all time, makes me think you need to start looking at a variety of 9-5's.

Some folks tout the 2002 and later improvements or mid cycle enhancements, 5-speed automatic, slight restyling, modest suspension improvements, of which the Aero got the most improvements, but they're all good, any year is fine. The improvements don't make the older ones obsolete or inadequate and older 9-5s can be suprisingly affordable and durable.
