It can be many reasons why a head gasket goes bad like a blown hose to begin with or a bad radiator and the driver keeps driving the car until it overheats badly.
It is very rare that the V6 needs a new head gasket and it is very few posts about it here.
The head bolts on the V6 is of superior design and strenght so it is no need to retorque them.
Without looking at the car it is not possible to say if the car needs a head gasket or not or if the shop just wants to make some extra money.
It is always good to get a second opinion if you don't know the dealership or trust them.
