I changed my own rear shocks to the same Bilstiens you have. It sounds to me like the top of the spring may not be seated correctly in the upper assembly. The top coil of the spring must engage a recess in the receiving part (spacer ring) to accommodate the thickness of spring "wire" where the last coil ends. If this is not done, the spring will be skewed off center aa you describe. Here's a quote from my ALLDATA DIY subscription:
"Fit the spring with spacer ring and spring bracket on the damper. IMPORTANT Make sure that the end of the spring fits in its recess in the spacer ring."
You will likely have to have the strut assembly pulled and get this reassembled properly. I doubt there's a safety issue. The spring can't come off; but this is something you should get sorted out soon.
