Neutral safety switch has nothing to do with your problem (starter wouldn't click at all if neutral switch is bad).
but AFAIK neutral safety switch should have nothing to do with 'limp home mode' either - all it does is prevent the starter from operating unless the shifter is in neutral or park. I'd welcome a correction on this if I'm wrong - I have no wiring diagram here with me.
You have the classic symptom of a loose battery cable at the starter - but you say it's already been replaced? I would take two minutes and double check, at both the battery and starter end of the cable. How's your battery? (Didn't see it on your 'replaced' list). Will it start if boosted? This really sounds like parts being thrown at a problem that was never diagnosed. Is your no-start only when the engine is hot? Or when it's cold as well?
Is the starter solenoid getting voltage when the key is turned to 'start' and there is a no-start condition? Easy to check with voltmeter. If the solenoid is getting voltage and you hear the click, then sufficient power is not getting transferred to the starter or the starter is not working. If there's no power there, then maybe you hear something else clicking... and perhaps problem lies in neutral switch or ignition switch. Try moving the shifter from P to N to see if that makes a difference.
Do you have access at the starter to the large conductor from solenoid to starter? (normally exposed on other makes, without crawling under my car I don't know if it's like that on Saab). If so, at no-start time you can short connection from battery cable at solenoid to exposed lug on starter - if engine spins at that point you KNOW it's a bad solenoid. I like to use the same big wrench I used to check the tightness of the battery cable at the solenoid to short the contacts.
