IMHO, and depending on how the car was stored, the biggest issues may be the effects of moisture and critters (I'm serious... see below).

Re moisture:

-- Change engine oil, transmission fluid (or oil if 5spd), brake fluid, and coolant.
-- Replace oil filter, transmission filter (if there is one), air filter, cabin air filter.
-- Check brake rotors and pads for rust. You may need to turn/replace the rotors and replace the pads.

Re Critters:

-- Check around the engine compartment, inside the dash, under the seats, in the trunk and anywhere else you can get to fairly easily to see whether mice or other critters lived in the car while it was stored. When I've stored cars here in New England... in garages or clean dry barns... mice have usually used them as homes for the winter. (Sound insulation and seat padding make nice nesting material). This is not just a sanitation issue (sometimes those nests can smell) but safety as well. In the 1980s, I parked my daily driver -- a nice new VW Quantum wagon -- in a detached garage. I needed to replace the radio antenna, and when I removed the radio and the gauge cluster, I found mouse nest and stash of bird seed behind the radio... and, that my "guests" had chewed the insulation off a lot of the wiring! It was only a matter of time before something shorted out, and that could have easily started a fire.
