Carbon Fiber/Wood dash complexities

I looked through the archives but couldn't find an answer to my situation. Appreicate any help!
Just purchased a 2000 9-5 Aero/5sp. Factory installed dash had dark faux wood. Previous owner said it was cracking around shifter so he had dealer put faux carbon fiber "kit" over all areas of the origional dash, including shifter area.
Now everything is twice as thick so the cup holder, buttons are harder to use and shifter leather cover doesn't stay on well. I inquired about fixing but have received conflicting stories. One said I couldn't take the origional and second layer carbon fiber off due to the way the origional is installed at the factory. Then, if I were to just take the carbon fiber off, realizing the glue used to keep it on, could really mess up the origional wood dash. So,
1. Can I have both origional and carbon fiber second layer removed, and purchase a new/used one and have that put directly on the dash/shifter?
2. If this is possible, is new from Saabnines the best deal or Goldwing or other bone yard be a good way to go?
