Congrats. I just bought a set of Nokian Z's myself: 2001 9-5 Aero.
You're right - these tires do seem very sticky and quiet. I'm running 225-45-17's on 2-piece BBS rims. These were the rims that came with the car - a CPO with 27K when I bought it. I had a set of 16 inch steel wheels and Nokian Hakkas put on the same day I took delivery - winter - snow - ice, etc. (The car came with an almost new set of Dunlop 901's, which pretty much bit the dust after I had put about 12K more miles on them.)
The Saab guys up here don't recommend 17-inch wheels in the winter, not even with snow tires. The roads are just too beat up, and handling is also an issue. I don't think I've ever seen an Aero with 17-inch wheels running in the winter.
Personally, mounting and balancing with a single set of rims seems like a lot of effort with very little return. It costs at least $100 around these parts to mount - onto the rims - and balance a set of tires ($25 apiece, and that's the cheapest price I've seen...) It's less than half of that for just swapping out tires already on their rims and balancing them.
Since you've now got a really nice set of summer times, why not get a set of Nokian Hakkapellitta snow tires for the winter? A bit noisy on dry pavement, but legendary (and rightly so) in snow and ice.
