Yes, change the coolant (about every two years). The 'lifetime' Dexcool means 'for the lifetime of the factory warranty'. Flush well and replace with yellow Zerex G-05, blue BASF G-48 or similar. The Zerex should be available locally.
'Convertible only'? Wonder what car that maintenance schedule is intended for? At 60k wouldn't hurt to do a repeated-drain-fill with 12qts of 3309/Toyota Type IV fluid. With trans hot, drain what you can, and replace the same amount (should be close to 4qts). Drive the car a few days until completely mixed. Repeat twice more, you've now used 12 qts and your fluid is almost completely new, without the stress of a power flush that (anecdotally) can cause problems.
To drain fuel filter, just have a drain pan under the filter when you remove the banjo bolts. Have new seals for the bolts on hand.
Think about using a long (original length) serpentine belt rather than the replacement short belt. Many people (me included) have had trouble with extra noise/vibration using the short belt. The center pulley (the tough one to replace, that gets skipped by the short belt) is larger and spins slower; you probably can make it to 120k before replacing it. The other pulleys should be replaced.
